So we’ve been in our house for about 3 1/2 years now and we decided it was time to just bite the bullet and hire someone to do a few yard projects that have been on the to do list forever!

First up…a little curb appeal for the front yard.

We contacted, Romero Trinity Contractors for a quote, the owner, JR, happens to be a neighbor of ours (added bonus) look him up if you live in the Austin area…we give him five stars.  After a bit of discussion with JR and an Old Fashioned or two (my hubs newest obsession since relocating to Central Texas)- we settled on a plan!

Our vision included a white limestone/brick combo for the front.  Texas Limestone is abundant in our area , which makes it a great natural stone to utilize for outdoor and indoor projects.

JR’s team dropped off a pallet of stone, we already had a pallet of brick leftover from the home build in 2015.  The team arrived bright and early on a Saturday morning…and these guys went to work on the front flower beds.

They quickly went to work…cutting stone, and putting the vision in place.  These guys were working so hard, it was hot…I kept them cool with a cooler of water.  We had a pool party scheduled that day, so my husband was cooking ribs and brisket…we made sure to give these hard working masons plenty to eat and drink while they were working…they graciously accepted BBQ for lunch and they worked well into the evening!

By Saturday evening the front was almost complete.  They came back the next morning to do the finishing touches and cleanup…

The end product…a beautiful upgrade to our curb appeal.  We couldn’t be more happy with how it all turned out! Now onto the next project…the backyard!

BBQ Chicken Personal Pizza

Wondering what to do with that left over BBQ chicken in the fridge… Busy nights call for something quick and easy! These personal sized BBQ Chicken pizzas definitely fill the bill. Healthy & filling & only take a few minutes to whip up!

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  1. Preheat oven to 350.
  2. Place 4 flour or corn tortillas on a baking sheet.
  3. Spread about 1 tablespoon of BBQ sauce on each tortilla (I used Rudy’s, because if you’re from Texas there’s no comparison for sauce).
  4. Sprinkle with cheese of your choice (I used Colby jack) but any cheese will do.
  5. Chop leftover BBQ Chicken & put on top of cheese.
  6. Top with diced green onions & tomatoes (I used my fresh tomatoes off my plant).
  7. Bake for 8-10 minutes, you can finish them off by turning the broiler on for a couple of minutes if you like them crispier.
  8. Top with fresh avocado, diced romaine & plain Greek yogurt (in lieu of sour cream) & enjoy!

INGREDIENTS:

  • Leftover BBQ Chicken (about 1 cup chopped)
  • 4 flour or corn tortillas
  • 4 tablespoons of BBQ sauce
  • 1/2 cup shredded cheese
  • 4 tablespoons diced green onions
  • 4 tablespoons diced tomatoes
  • 1/2 avocado sliced
  • Plain Greek yogurt
